Beau Cook is a country boy from Castlemaine, Victoria, who made his mark on Masterchef Australia series 4. Cheeky at heart, Beau is an all-round Aussie bloke with a passion for fitness, healthy eating, rustic food and local produce.
Beau’s food journey has continued post Masterchef, working as a Personal trainer, food coach and healthy habits mentor, Beau hopes to follow in the steps of his idol Jamie Oliver and inspire people to eat healthy, wholesome food.

Mango & cinnamon coyo salad
A great energy packed breakfast salad that is super fresh, uplifting and easy to prepare!
You could use whatever fruit you like with this recipe… and for something a bit more substantial throw in some muesli.
Ingredients
- 1 mango, peeled and cut into chunks
- 2 tbl of Coyo (Coconut milk yoghurt), or natural Greek yoghurt
- 1/3 tsp of ground cinnamon
- 1tbl of raw hazelnuts, crushed
- Small handful of mint leaves, torn
- 1/2 lime, cut into wedges
- Drizzle of honey

Instructions
- Prep mango, crush nuts in mortar and pestle or food processor, then mix yoghurt with cinnamon.
- Assemble: Smear the yoghurt over a plate, then lay down mango, scatter over nuts, squeeze over some lime juice and drizzle with honey.
